Tutorial - How to make a chocolate ball fall (M&M / Malteser Cake)
Ever since posting this cake on my instagram and facebook page, I have had a lot of people ask me "how"?
I have always been the type of person that likes to share my recipes and methods - it's great to see that people have such a passion for baking and sharing ideas will only help strengthen the industry.
To make the above cake, the main ingredient is patience. Each confectionery is individually stuck together using melted chocolate.
Obviously you cannot hold the M&M until the chocolate sets for it to stay in place. Therefore, I used a cooling agent spray - you can find these at any good cake supplies shop (note that they are a little bit pricey). My favourite cake supply shops in Melbourne is Cake Deco. Philip and his team have a great wealth of knowledge and will guide you in the right direction.

When I was younger, I was lucky enough to train in Malaysia at the Barry Callebaut Academy.
Here, I not only learnt some amazing skills, but also discovered how chocolate is made and the whole process that goes in to create the chocolate we eat at home.
I can honestly say that Callebaut is my favourite chocolate - it tastes amazing and is so easy to work with. It is a little more expensive than your average chocolate, but the benefits far outweigh the cost. This is no average chocolate!
